Quinary Hong Kong's One-of-a-Kind Takeover at Ruby Wong’s Godown Is a Celebration of Sensory Cocktail Artistry
MANILA – June 27, 2025 — Manila’s cocktail scene reached new heights last night as Quinary Hong Kong, ranked 26th on Asia’s 50 Best Bars list, made its highly anticipated debut in the Philippines through an exclusive two-night takeover of Ruby Wong’s Godown at Admiral Hotel Manila MGallery.
The visiting team, led by Bar Manager Kai Ng and Head Mixologist Jackie Wong, delivered a sensory experience unlike any other. True to their “Multisensory Mixology” philosophy, Quinary’s cocktails didn’t just play with taste—they engaged sight, smell, and texture, drawing from techniques popularized by molecular gastronomy trailblazers like Ferran Adrià.

Guests were treated to cocktails that both surprised and delighted, curated especially for the takeover in collaboration with Don Papa Rum, a proudly Filipino brand known for its single-island rum. The bespoke menu, featuring the rich, layered flavors of Negros Occidental's signature spirit, captured the spirit of East-meets-West creativity.
“This collaboration was about bringing the best of Asia to Manila,” said Quentin Renard, Hotel Manager of Admiral Hotel Manila. “We wanted to showcase not only international talent like Quinary but also strengthen ties with local heritage brands like Don Papa.”
Held as part of MGallery Collection’s World Cocktail Months, this is Ruby Wong’s second time hosting an international guest shift. Last year, they welcomed the Kinsman team from Singapore. Yssa Yecla, Admiral’s restaurant operations manager, confirmed that the tradition will continue annually, adding that these events are part of their effort to elevate Manila’s bar scene.
The immersive experience didn’t end with cocktails. The sultry, enigmatic interiors of Ruby Wong’s Godown were set to the sounds of live jazz vinyl spun by Discollectiv, while Malditattoo Studios added an edgy, urban flair with live tattoo and piercing sessions—turning the bar takeover into a full-blown multisensory festival.
As Manila’s discerning cocktail lovers sipped and savored through Quinary’s creations, one thing was clear: this wasn’t just a bar takeover. It was a rare convergence of craftsmanship, culture, and community that left guests buzzing—both from the spirits and the spectacle.
About the Bartenders
KAI NG
Kai Ng is currently the bar manager of Quinary. Before joining the team, he had brief stints at modern izakaya Neon Pigeon, Latin destination Casa Poncho, and even on cruise ships. He was at the helm of the bar at DON HO – Social Kitchen & Bar and has worked in the award-winning Roomers Bar in Frankfurt.
JACKIE WONG
Jackie Wong is currently the bartender at Quinary. His unwavering persistence and hard work have led him to an incredible achievement – becoming the MONIN CUP 2024 Hong Kong Champion, standing out among a host of talented contestants. He also won the Italicus finals in Hong Kong and is poised to join the global finals in Monte Carlo this coming July 2025.
